惊喜云南|德昂酸茶:德宏山水酿就的独特风味 Surprise Yunnan - De'ang Sour Tea: The Unique Flavor Brewed in Dehong Mountain and Water

在彩云之南的德宏,藏着一份神秘的茶香——德昂酸茶。当地的德昂族将茶叶融入生活的每一处,而酸茶正是他们智慧与文化的结晶。

走进德宏州芒市的三台山乡,就走进了酸茶的世界。这里山清水秀,茶园葱郁,大叶种茶树在云雾缭绕中舒展身姿,为酸茶提供了天然的优质原料。

德昂酸茶的制作,是一场与时间的对话。茶叶采摘季,茶农们穿梭在茶园,指尖轻采芽尖的一对叶子。随后,经过杀青、揉捻,茶叶被装入竹筒,密封后深埋地下,历经三个月甚至更久的发酵,才成就了这独特的风味。

2021年5月,德昂族酸茶制作技艺成功列入国家级非物质文化遗产名录。2022年11月,“中国传统制茶技艺及其相关习俗”列入联合国教科文组织人类非物质文化遗产代表作名录,德昂族酸茶制作技艺作为子项目也随之入选。

德昂酸茶分湿茶和干茶两种,湿茶为食用,美味可口。干茶则用来饮用,汤色金黄透亮,十分诱人。嗅之微酸,喝之轻柔爽口,既有熟茶的柔和,又不失绿茶的清新,回味甘甜,余韵悠长。

In Dehong, south of the colorful clouds, there is a mysterious tea fragrance - De'ang sour tea. The local De'ang people integrate tea into every aspect of their lives, and sour tea is the crystallization of their wisdom and culture.
Entering Santai Mountain Township in Mangshi, Dehong Prefecture, one enters the world of sour tea. Here, the mountains and waters are beautiful, the tea gardens are lush, and the large leaf tea trees stretch out in the mist, providing natural high-quality raw materials for sour tea.
The production of Deong sour tea is a dialogue with time. During the tea picking season, tea farmers shuttle through the tea gardens, picking a pair of leaves at the tips of their fingertips. Subsequently, after withering and rolling, the tea leaves were packed into bamboo tubes, sealed and buried deep underground. After three months or even longer fermentation, this unique flavor was achieved.
In May 2021, the production techniques of De'ang sour tea were successfully included in the national intangible cultural heritage list. In November 2022, "Traditional Chinese Tea Making Techniques and Related Customs" was included in the UNESCO Representative List of the Intangible Cultural Heritage of Humanity, and the De'ang sour tea making techniques were also selected as a sub project.
Deong sour tea is divided into two types: wet tea and dry tea. Wet tea is edible and delicious. Dry tea is used for drinking, with a golden and translucent soup color that is very tempting. Smelling slightly sour, drinking gently and refreshing, it combines the softness of ripe tea with the freshness of green tea, leaving a sweet and lingering aftertaste.
Come to Dehong, amidst the green mountains and clear waters, accompanied by the lingering aroma of tea, and savor this unique De'ang sour tea.
